Cozy, Homemade Soups for Cold Weather

As temperatures drop again and another cold front moves in, there’s nothing more comforting than a warm bowl of homemade soup. These cozy soup recipes are perfect for chilly evenings, busy weeknights, or slow weekends at home. Ingredients

• 10 slices of bacon, chopped
• 1 medium onion, chopped
•
3 celery ribs, chopped
•
4 – 6 cloves of garlic, chopped
•
4 tablespoons butter
•
1 cup all-purpose flour
•
3 cups warm chicken stock
•
3 cups warm milk
|•
1 cup warm heavy cream
•
16 oz. white cheddar cheese, grated
•
1/2 teaspoon cayenne pepper 
•
1 tablespoon Worcestershire sauce
•
Coarse salt, garlic salt, and freshly ground pepper to taste
•
1 cup pale-lagger style beer 
•
Chopped scallions, cheddar cheese and bacon bits, for garnish
Preparation

Gather all ingredients and prep them.

Cook the bacon in a large Dutch oven, stirring over medium heat for about 5 – 10 minutes, or until lightly browned.  Remove about 1/3 cup of the cooked bacon and reserve for topping.

Increase heat to medium-high and add onion, celery, and butter and sauté until onion has softened, about 5 - 8 minutes. Add garlic, salt, pepper, Worcestershire sauce, garlic salt and cayenne stirring constantly until fragrant for about a minute.

Add flour and cook, stirring constantly, for about 5 minutes over medium heat.  Whisk in warm chicken stock and bring to boil for about a minute. Reduce heat to simmer and cook for 15 minutes, stirring occasionally.

Add warm milk and cream continue to simmer for 12 minutes and do not boil.

Remove from heat and add cheese. Blend with immersion blender until cheese is melted and soup is smooth. Stir in beer and use immersion blender again until the soup is creamy and uniform.  Taste and adjust seasoning if needed (salt, pepper, garlic salt, etc.) If the soup is too thick, add some warm milk.

Serve immediately, garnished with cheddar cheese, scallions and reserved bacon.

Ingredients

• 2-3 boneless skinless chicken breasts
• 2 c. low-sodium chicken broth
•
1 cup milk
•
1 can cream of chicken soup 10.5-oz. can
•
1 onion chopped
•
2 large sweet potatoes chopped
•
1 tsp. dried Italian seasoning
•
salt
•
ground black pepper
•
4 sprigs fresh thyme
•
1 bay leaf
•
1 cup carrots peeled and chopped
•
3 cloves garlic minced
•
1 16.3-oz. can refrigerated biscuits

Preparation

Chop all your vegetables. Add your chopped onions in the bottom of your crockpot. Then add the raw chicken breast on top of your onions. Season with oregano, salt, and pepper to taste.

Pour soup, milk broth over chicken, then add thyme and bay leaf. Cover and cook on high for 3 hours or until chicken if fully cooked.

Discard the thyme and bay leaf. Remove the chicken breast and place on a hard surface. Shred chicken with two forks until it is all shredded. Add  in carrots, sweet potatoes, and garlic. Cut biscuits into small bite-sized pieces. Stir into chicken mixture. Spoon liquid over any biscuits.

Cook on High until vegetables are tender and biscuits are cooked through, stirring every 30 minutes, about 1 hour to 1 hour 30 minutes or until the vegetables are tender.

Ingredients

• 1 cup of evaporated milk
• 1 cup of milk 
•
1 cup of chicken broth (optional)
•
1/2 cup of carrots
•
1/2 cup of onions
•
1/2 celery, chopped
•
1 cup of potatoes, cubed and boiled

Preparation

In a pot, saute your onions, celery, carrots and potatoes together.

Then mix in your milks, broth and cook for 30 minutes and serve.

One Pot Cauliflower Chowder: This One Pot Cauliflower Chowder combines milk, bacon, cheese, and hearty vegetables for a flavorful and warm meal.

Ingredients
• 3 bacon slices, chopped in small pieces
• 1 tbsp unsalted butter
• 1 tbsp olive oil
• 1/2 yellow onion, diced
•
2 carrots, diced
•
2 celery stalks, diced
•
1 cauliflower head, chopped
•
2 tsp garlic
•
1/4 tsp dried thyme
•
3 tbsp flour
•
1/2 cup vegetable broth
•
3 cups low-fat milk
•
1 bay leaf
•
salt and pepper to taste

Optional Ingredients:
• fresh parsley
•
grated Cheddar cheese

Preparation
Chop bacon into little pieces and add them to a Dutch oven to render out the fat. Once the bacon is cooked, use a slotted spoon to remove the pieces to a paper towel-lined plate. Drain the fat out of the pot but do not wipe clean.

Place the butter and olive oil in the pot and add onion, carrot and celery. Once they start cooking, after about 2 minutes, add the cauliflower, garlic and thyme and turn the heat down to medium-low. Cook for another 15 minutes, or until cauliflower is tender. Add the flour and a little more oil if the bottom of the pan is dry, and stir until all the veggies are coated.

Pour in the liquids (vegetable broth and milk) and add the salt, pepper and bay leaf. Simmer for 20-40 minutes over low heat.

Serve with bacon bits, cheese and parsley and enjoy with a glass of real milk!

Preparation
Heat butter, cup of milk and two tablespoons of flour.
Whisk until smooth.
Add remaining flour to mixture.
Transfer to crock pot and add 3 cups of chicken broth. Stir slowly.
Add chicken, peas and carrots
Allow to simmer on low for 2 hours.
Sprinkle salt and pepper
Top with parsley

Ingredients
• 4 tablespoons unsalted butter, divided
•
1 pound boneless chicken breast, diced
•
1/2 cup diced yellow onion
•
6 jalapeños, seeded and diced 
•
8 ounces cream cheese, softened
•
1/2 cup shredded mozzarella cheese
•
1/2 cup shredded Monterey jack cheese
•
4 slices bacon, cooked crisp and crumbled 
•
1/2 cup Panko breadcrumbs
•
1 teaspoon salt
•
1/2 teaspoon black pepper
•
16 eggroll wrappers
•
1 tablespoon cornstarch mixed with 1 tablespoon water
•
vegetable oil, for frying
•
1/2 cup ranch dressing for serving

Preparation
Melt 2 tablespoons butter in a large skillet over medium-high heat. Add chicken and cook until no longer pink and starting to brown, about 8 to 10 minutes. Transfer chicken to large bowl, set aside. 

Return the skillet to heat and add remaining 2 tablespoons butter. Add onion and jalapeños, cook until softened, about 5 minutes. Transfer vegetables to bowl with chicken; allow mixture to cool slightly. Add cream cheese, Monterey jack, and Mozzarella cheese, bacon, breadcrumbs, salt and pepper; mix until combined. 

To assemble egg rolls, place one wrapper with point facing you. Place 2 tablespoons of filling in center of wrapper; spread mixture slightly to form a log. Fold one pointed side over filling; fold in ends and then roll to form tight log. Seal final edge with cornstarch mixture. Continue until all eggrolls are formed. 

Fill large pot with oil at least 3 inches deep. Heat oil to 350 degrees F. Once hot, carefully drop egg rolls in a few at a time and fry, turning often, until brown and crispy, about 5 minutes. Do not overcrowd the pan or the oil will drop in temperature. Drain and transfer to a plate lined with paper towels. Serve egg rolls warm with ranch dressing for dipping.

3/4 cup pizza/marinara sauce (can use more if you’d like to make it saucy)
•
3/4 cup mozzarella cheese (can use more and can use either shredded or sliced)
•
A bag of pepperoni

Homemade Ranch Recipe:
• 1/2 cup buttermilk (to make combine 1 cup of Florida Milk & 1 tablespoon of lemon juice, stir and let sit for a couple of minutes)
•
1 cup sour cream
•
1 cup mayo
•
1/4 cup dill
•
1/4 cup parsley
•
1/4 cup chives
•
Juice of one lemon
•
1 garlic glove (minced)
•
Salt, Pepper, Onion Powder, & Garlic Powder (to taste)

Preparation
For Pizza Roses:
• Cut store-bought or homemade pizza dough into strips.
•
Layer on pizza or marinara sauce, shredded mozzarella cheese, and pepperoni (let the edges peek out for a rose-like effect).
• Roll, place in a greased muffin pan, and bake at 425°F for 15 minutes or until golden brown.

For Homemade Ranch:
Combine 1/2 cup buttermilk with 1 cup of sour cream, 1 cup of mayo, 1/4 cup dill, 1/4 cup parsley, 1/4 cup chives, juice of one lemon, 1 garlic clove minced, and salt, pepper, onion powder & garlic powder to taste.

Buffalo Ranch Wings: These Buffalo Ranch Wings are crispy, spicy, and tangy — perfect for cooler nights and casual gatherings. Coated in a zesty buffalo sauce and paired with a creamy ranch dip, they deliver bold flavor with a satisfying crunch that’s sure to be a crowd-pleaser.

Ingredients
• 3 lbs. chicken wings
• 1/3
cup corn starch + 1 tablespoon baking powder
•
1/4 cup Franks Hot Sauce
•
oil for frying (*vegetable, corn, safflower or canola)

Ranch Dressing
• 1/2 cup mayo
• 1/4 cup buttermilk
•  1/4 cup sour cream
•
1/4 teaspoon garlic powder
• 1/2 tablespoon dijon
•
1 tablespoon lemon juice

• 1 tablespoon freshly chopped herbs (chives, dill, basil)
• 3/4 teaspoon salt
• 1/4
 teaspoon pepper

Preparation
Make sure your chicken wings are fully thawed and dry.

Add wings to two plates and microwave on high 5 minutes. You may need to wait for one plate to finish before adding the other.

While par-cooking your wings, add ALL ingredients for the ranch dressing to a large bowl along with the hot sauce. Mix well.

Add corn starch and baking powder to a large bowl and set aside.

When wings are out of the microwave, drain juices before tossing them in the corn starch & baking powder to coat thoroughly.

Preheat oil in a large pot over medium high heat until oil reaches 375 degrees F.

Add wings to hot oil in small batches and fry for 4-5 more minutes or until fully cooked inside and golden brown on the exterior. Repeat until all wings are done. Let grease drain on rack or paper towels.

While still warm, toss the fried wings in the buffalo ranch sauce and serve immediately.

10 oz jar sun-dried tomatoes in oil, drained + chopped

8 oz Italian blend cheese, shredded

Preparation

In a medium bowl, combine cream cheese, chopped sun-dried tomatoes, shredded cheese, chopped curly parsley, and your favorite seasonings.

Mix thoroughly with a rubber spatula and then by hand until all ingredients are well combined.

Ingredients
• 8 oz cream cheese brick, softened
• 1/2 cup ranch salad dressing
• 1/2 cup buffalo hot sauce
• 1/2 cup cooked bacon, chopped
• 2 cups shredded mozzarella cheese, divided
• 1 cup fresh cooked or canned chicken, shredded

Optional garnished: green onion, more bacon

Preparation

Pre-heat oven to 350°F.

In a medium-sized bowl, combine cream cheese, ranch dressing, and buffalo hot sauce until blended.

Fold in the bacon, 1 cup of the mozzarella cheese, and all of the chicken into the mixture until fully incorporated.

Transfer to a small baking dish.

Top with remaining cheese. You may also add a little extra bacon to the top if desired.

Bake for about 20 minutes or until the cheese is melted and the dip is fully warmed through.

Let cool.

Add chopped green onion for additional garnish if desired.

• 34 Pretzel Dipping Sticks
• 5 oz vanilla greek yogurt
• 1.5 tbsp chocolate syrup
• Sprinkles

Preparation

Mix 5 tablespoons yogurt with 1.5 tbsp chocolate syrup

Dip each pretzel dipping stick into the yogurt syrup mix

Place dipping sticks on cookie sheet lined with parchment paper

Freeze for 15 minutes

Remove from freezer and top with sprinkles

Freeze for 2 hours

Remove pretzel dipping sticks from freezer. Serve and enjoy.

Ingredients
• 8 ounces cream cheese, softened
• 1 cup sour cream
• 1 teaspoon garlic powder
• 1/2 teaspoon salt
• Pinch of cracked black pepper
• 2.5 cups cheddar cheese, shredded
• 12oz bacon, cooked and chopped
• 3/4 cup fresh jalapenos, diced
• 1/4 cup green onion, chopped

Topping:
• 1 cup panko crumbs
• 1/4 cup cheddar cheese, shredded
• 1/4 cup butter, melted

Preparation

Preheat oven to 375°F.
In a large bowl, mix cream cheese, sour cream, garlic powder, salt, and pepper until smooth and fluffy.
Add cheddar cheese, bacon, jalapenos and green onions. Mix well.
Spread into an 8x8 baking dish.
Combine bread crumbs, melted butter and 1/4 cup shredded cheddar.
Sprinkle the crumb topping over the cream cheese mixture.

Bake 15-20 minutes, or until hot and breadcrumbs are golden brown.
